she hearts (food)- Vegetarian Pot Pie

Tonight I made Vegetarian Pot Pie for dinner.  It was delicious and super simple.  All you have to do is chop up a bunch of veggies, cook them until they are and bake them in the oven.  Here is the recipe:

millions of peaches

Today I made what seems like a million peach pies.  OK more like 5. But still. I made a lot of pies.  More than I've ever  made at one time. Ever. I  know it's only August but  I thought it might be a good idea to stock up for the holidays.  Between my husband and I we have 4 sets of parents.  That's 4 separate Thanksgivings we have to attend so planning in advance sounded like a great idea to me.My mom came over and she make jars of peach jam for Christmas gifts and I made the pies for thanksgiving.    The peaches were fresh from a local organic farm.  Here is the recipe I used for the pies:

5 c. fresh peaches

3/4 c. sugar


3 tbsp. tapioca

1/4 tsp. cinnamon

1/4 tsp. nutmeg

2 pie crusts, unbaked


Roll out pie crust and put in a 9 inch pie plate. Combine peaches, sugar, cinnamon and tapioca. Pour into crust. Dot with butter. Cover with second pie crust. Bake at 425 degrees for 30 to 35 minutes. (Make sure you put this pie on a cookie sheet in the oven because it can boil over and make a real mess of the oven.) I used a basic pie crust recipe and rolled out the dough by hand. 
 
I am actually quite impressed with my domestic side today!

Open for business

After a short hiatus, Amelie's Paperie is up and running again with a new vision and wedding invitation collection.  Lets start with the vision.  When I first opened my little shop on Etsy I mainly focused on Wedding Invitations.  I work in the wedding industry (in my real life) so it is something that I know very well and something I am passionate about.  On a whim I put up some old art work I had lying in my basement from my college days (sadly the last time I had made time to paint) and what do you know...they sold! As you can imagine I was very excited.  I had never sold any piece of art I had ever done.  So I decided that instead of solely focusing on  invitation and paper goods I would turn my shop in to a paper store/ gallery and boutique for accessories and home goods.  Now bear with me, this is going to take some time to get of the ground but I have a million ideas swirling around inside my head and I can't wait to get back to my oil paints. 

Now for the invitations.  The new invitation line was inspired by doodling.  It is simple and sweet, bold and modern.  I love it.  Hope you do too.

Back to School

This is my favorite time of year. Ever. I've never been particularly studious or in to school in general but there is something about the anticipation of a new school year that has always excited me.  I thinking it's almost like my New Year.  The start of a new school calender means new goals, new clothes, newly sharpened # 2 pencils and trapper keepers.  Even now that I have been out of a classroom for over 4 years I still have an overwhelming desire to drive to the store and buy a million brand new notebook.  If I were going back to school in a few weeks these items would be on my wish list:

Well hello there...

I've thought about blogging for a long time and I finally decided to start.  I've always admired the people who can chronicle their lives in a journal or diary.  I've always wanted to be one of those people.  The reason that I finally have decided to start is because I feel like I am starting a new phase in my life (or at least I am trying to) and I want to document it. I hope along the way someone out there might find what I have to say interesting of maybe even inspiring.
